Lemon Or Lime Curd.
Ingredients.
1 and a half cups sugar.
220g butter,diced.
Finely grated zest of 1 lemon(or lime) juice,strained.
6 LARGE EGGS.
Method.
Place the sugar,butter,lemon zest and juice in a heatproof bowl over a pot of boiling water,or in a double boiler. Heat medium heat until the butter has melted. Whisk the eggs in a separate bowl and stir them in.Cook over a gentle heat, stirring constantly with a wooden spoon,until the mixture thickens-about 3-5 minutes. It's ready when the curd holds a line when you run your finger across the back of the coated spoon. Pour into hot sterilised jars and seal.
